RESEARCH
Our research team is focused on the degradation process of food with an emphasis on biodegradation of food products for human consumption. We are looking to gain new insights about the mechanisms behind food spoilage in order to advance novel ways to extend food shelf-life, enhance its safety and valorize food residues (e.g. food waste). Our research is arranged according to the general idea of the waste management hierarchy. The lab projects are roughly divided into the following sections according to the general waste treatment options hierarchy, also known as “the three Rs”: 1) Reduction, 2) Reuse, 3) Recycle
